Jicama!

This delicious root vegetable is sometimes called the “Mexican potato” or the “Mexican turnip” because of its white, solid flesh. But jicama is waaay better than a potato… it’s refreshing, crisp texture is closer to an apple and is delicious sprinkled with lime juice and sea salt.

Chose round, firm, unblemished jicama and store them in the refrigerator. Slice into strips and eat raw, add to homemade salsa or a salad, or cook in stir-fries or soups.

Jicama is a low glycemic, low calorie food packed with fiber and vitamin C! One cup of contains  only 49 calories, a whooping 6 grams of fiber, and 44% of the daily value for vitamin C.

In addition to eating jicama raw with homemade guacamole, my favorite ways to enjoy the Mexican potato are jicama salsa and jicama homefries. Try these two recipes and let me know what you think:
